Oldtimer Burger with Cheese Recipe

Ingredients
  

  • 12 oz (340g) 80/20 ground beef, divided into 2 patties of 6 oz each
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 slices American cheese
  • 2 brioche burger buns
  • 1 tbsp unsalted butter
  • 4 tbsp Thousand Island dressing
  • 2 tsp yellow mustard
  • 2 tsp ketchup
  • 4 leaves green leaf lettuce
  • 4 slices ripe tomato
  • 8 to 10 dill pickle chips
  • 4 tbsp white onion, finely diced

Method
 

  1. Shape the ground beef into two 6 oz patties, each about ¾-inch thick. Season both sides with the kosher salt and black pepper and press a shallow thumb indent into the center of each.
  2. Stir together the Thousand Island dressing, yellow mustard, and ketchup in a small bowl until smooth. Set aside.
  3. Melt the butter in a skillet over medium heat and toast the buns cut-side down for about 2 minutes until golden. Remove and set aside.
  4. Raise the heat to medium-high and cook the patties for 3 to 4 minutes on the first side, then flip and cook 2 to 3 minutes on the second side. In the last 30 seconds, place a slice of American cheese on each patty, cover the pan, and let it melt. Rest the patties for 2 minutes.
  5. Spread the sauce on both cut sides of each bun. Layer the lettuce and tomato on the bottom bun, add the patty, then top with the pickle chips and diced white onion. Press the top bun on and serve immediately.

Notes

These patties are best cooked and eaten right away, but you can shape them and keep them covered in the fridge for up to 24 hours before cooking. Make the sauce at the same time you shape the patties to save yourself a step when it's time to cook. The thumb indent in the center is a small detail that makes a noticeable difference in how evenly the patty cooks through.
