KFC 11 Herbs and Spices Chicken Recipe

Ingredients
  

  • 1 whole chicken (about 3.5 lbs), cut into 8 pieces
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp celery salt
  • 1 tsp black pepper
  • 1 tsp dried mustard
  • 1 tsp paprika
  • 1 tsp garlic salt
  • 1/2 tsp dried sage
  • 1/2 tsp white pepper
  • 2 large eggs
  • 4 tbsp whole milk
  • 4 cups vegetable oil

Method
 

  1. Whisk together the flour, salt, thyme, basil, oregano, celery salt, black pepper, dried mustard, paprika, garlic salt, sage, and white pepper in a large shallow bowl until evenly combined. In a separate bowl, beat the eggs with the milk until smooth.
  2. Dredge each chicken piece in the seasoned flour, dip in the egg wash, then press back into the flour a second time. Set on a rack and rest for 5 minutes.
  3. Heat the vegetable oil in a large Dutch oven over medium-high heat to 350°F (175°C), about 8 minutes.
  4. Fry 3 to 4 pieces at a time, skin-side down first, for 12 to 14 minutes, turning once, until deep amber and the internal temperature reads 165°F (74°C). Return oil to 350°F before the next batch.
  5. Lift each piece onto a wire rack and rest for 3 minutes, then transfer to a serving platter skin-side up and serve immediately.

Notes

The spice blend can be mixed without the flour up to 2 weeks ahead and stored in a sealed jar, which makes this much faster to pull together on a weeknight. If your chicken pieces are on the larger side, add 2 minutes to the fry time and always confirm doneness with a meat thermometer rather than relying on color alone.
