Italian Dressing Recipe

Ingredients
  

  • 3 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • ½ cup olive oil
  • 1 tsp Dijon mustard
  • 1 tsp sugar
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp onion powder
  • ¼ tsp red pepper flakes
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Combine the red wine vinegar, lemon juice, Dijon mustard, sugar, minced garlic, dried oregano, dried basil, onion powder, red pepper flakes, salt, and black pepper in a jar or bowl and whisk or stir until the sugar dissolves, about 30 seconds.
  2. Stream in the olive oil while whisking steadily, or add it to the jar, seal, and shake hard for 20 seconds until the dressing looks opaque and combined.
  3. Taste and adjust with a pinch of salt if flat, or a pinch of sugar if too sharp.
  4. Pour over salad greens, toss, and garnish with a pinch of dried oregano and fresh black pepper before serving.

Notes

This dressing keeps for up to 7 days in the fridge, but the garlic flavor intensifies over time, so it's boldest on day 2 or 3. If you're making it well in advance, swap the fresh garlic for ½ tsp garlic powder for a more even flavor throughout the week. Always re-shake before serving since the oil and vinegar will separate on standing.
