Griddle Cakes Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups buttermilk
  • 2 large eggs
  • 3 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter, for the pan

Method
 

  1. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry and fold with a spatula until just combined, about 15 to 20 strokes. Rest the batter for 5 minutes.
  4. Heat a skillet or griddle over medium heat, melt about 1/2 tsp of the pan butter, and cook 1/3 cup of batter per pancake for 2 to 3 minutes per side, adding fresh butter between batches.
  5. Stack 3 griddle cakes per plate, top with a pat of cold butter, and drizzle with warm maple syrup. Serve immediately.

Notes

The batter is meant to look lumpy — resist the urge to stir it smooth. If you're cooking for a crowd, a 200°F (93°C) oven on a sheet pan keeps finished pancakes warm without drying them out. Leftover pancakes reheat much better in a dry skillet than in a microwave.
