Buttery Copycat Panera Orange Scones Recipe

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 1 large egg
  • 1/2 cup heavy cream, plus extra for brushing
  • 1 tbsp orange zest
  • 2 tbsp orange juice, for the dough
  • 1 tsp vanilla extract
  • 1 cup powdered sugar, for the glaze
  • 2 tbsp orange juice, for the glaze
  • 1 tsp orange zest, for the glaze

Method
 

  1. Whisk the flour, sugar, baking powder, and salt together, then rub in the orange zest.
  2. Cut the cold butter into the dry mixture until pea-sized crumbs form.
  3. Whisk the egg, cream, orange juice, and vanilla, fold into the dry mixture, then pat into an 8-inch round and cut into 8 wedges.
  4. Preheat the oven to 400°F (200°C), brush the wedges with cream, and bake 18 to 20 minutes until golden.
  5. Whisk the glaze ingredients together and drizzle over the warm scones before serving.

Notes

For the tallest rise, chill the cut wedges in the freezer for 10 minutes before they go into the oven. If you want to prep ahead, the dough can be shaped and refrigerated overnight, covered tightly, then baked fresh in the morning.
