Brownie Batter Crumbl Cookie Recipe

Ingredients
  

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 tbsp brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (115g) unsalted butter, softened (frosting)
  • 1/2 cup (100g) brown sugar, packed (frosting)
  • 1/4 cup (25g) unsweetened cocoa powder (frosting)
  • 2 tbsp heavy cream (frosting)
  • 1 tsp vanilla extract (frosting)
  • 1 cup (120g) powdered sugar, sifted (frosting)
  • Pinch of salt (frosting)

Method
 

  1. Beat 1 cup softened butter with 1 cup granulated sugar and 2 tbsp brown sugar on medium speed for 3 minutes, until pale and fluffy.
  2. Add 2 eggs one at a time, beating 30 seconds after each, then mix in 2 tsp vanilla extract.
  3. Whisk together 1 3/4 cups flour, 1/2 cup cocoa powder, 1 tsp baking powder, and 1/2 tsp salt in a separate bowl; fold into the butter mixture until just combined.
  4. Scoop dough into 16 balls of about 3 tbsp each, press to 3/4-inch thick on parchment-lined sheets, and bake at 350°F (175°C) for 11 to 13 minutes. Cool completely.
  5. Beat 1/2 cup softened butter for 2 minutes, then mix in 1/2 cup packed brown sugar, 1/4 cup cocoa powder, and a pinch of salt. Add 2 tbsp heavy cream and 1 tsp vanilla, beat 1 minute, then beat in 1 cup sifted powdered sugar on medium-high for 2 minutes until fluffy.
  6. Spread frosting over each cooled cookie in a swirl and finish with a light dusting of cocoa powder.

Notes

The cookies should look slightly underdone in the center when you pull them — they set up fully as they cool on the pan, and overbaking is the main reason these turn out dry. If you're making the frosting ahead, store it in the fridge and let it come to room temperature for 20 minutes before spreading so it loosens back up.
