Zinger Sauce Recipe

Ingredients
  

  • 4 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 tsp hot sauce
  • 1 tsp apple cider vinegar
  • ½ tsp cayenne pepper
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp sugar
  • ¼ tsp salt

Method
 

  1. Whisk together the 4 tbsp mayonnaise, 1 tbsp sriracha, and 1 tsp hot sauce in a small bowl for about 30 seconds until the color is uniform and no white patches remain.
  2. Add the 1 tsp apple cider vinegar, ½ tsp cayenne, ½ tsp smoked paprika, ¼ tsp garlic powder, ¼ tsp onion powder, ¼ tsp sugar, and ¼ tsp salt, then whisk for 1 minute until fully combined and deep orange-red throughout.
  3. Taste and adjust heat with additional cayenne in ⅛ tsp increments, or a pinch more sugar if the sauce tastes too sharp.
  4. Spoon into a serving bowl, drizzle with a little extra sriracha, and dust the top with smoked paprika before serving.

Notes

This sauce is a no-cook recipe, so the quality of your mayo makes a real difference. Full-fat, good quality mayo gives a richer, more stable base. If you're making it for a group, double the batch and store the extra in the fridge — it's noticeably better on day two once everything has had time to settle.
