Wingstop Cajun Wings Recipe

Ingredients
  

  • 2 lbs chicken wings
  • 2 tbsp Cajun seasoning (for the rub)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 3 tbsp cornstarch
  • Vegetable oil for frying
  • 3 tbsp unsalted butter
  • 1 tbsp Cajun seasoning (for the finish)

Method
 

  1. Pat the wings dry, toss with the Cajun seasoning, garlic powder, onion powder, smoked paprika, kosher salt, black pepper, and cayenne pepper, then coat with the cornstarch and toss again for 1 minute.
  2. Heat vegetable oil to 375°F (190°C) in a Dutch oven and fry the wings in 2 batches for 5 to 7 minutes per batch until deep golden brown and 165°F (74°C) internal temperature.
  3. Transfer wings to a wire rack and rest for 3 minutes.
  4. Melt the butter, stir in the Cajun seasoning, then toss the wings in the mixture for 30 seconds until fully coated.
  5. Pile onto a serving plate, add a pinch of extra Cajun seasoning on top, and serve with celery sticks and dipping sauce.

Notes

If your Cajun seasoning blend is on the saltier side, taste the dry rub before it goes on the wings and cut back the kosher salt to 1/2 tsp. The wings can sit in the seasoning rub, uncovered in the fridge, for up to 24 hours before you fry them, which gives you a head start on a busy night.
