Turkey Chili Recipe

Ingredients
  

  • 1 lb ground turkey (93% lean)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) dark red kidney beans, drained and rinsed
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp kosher salt, plus more to taste
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • Sour cream, shredded cheddar, sliced green onions, for serving

Method
 

  1. Heat 1 tbsp olive oil in a large pot over medium-high heat. Add 1 lb ground turkey, let it sit undisturbed for 3 minutes, then break it up and cook until browned and cooked through, about 8 minutes total.
  2. Reduce heat to medium. Add the diced onion and red bell pepper and cook for 5 to 6 minutes until softened. Stir in 4 cloves minced garlic and cook for 1 minute.
  3. Clear a space in the center of the pot, add 2 tbsp tomato paste, and cook for 1 minute until it darkens. Add 2 tsp chili powder, 1 tsp smoked paprika, 1 tsp cumin, 1/2 tsp oregano, 1/2 tsp kosher salt, 1/4 tsp black pepper, and 1/4 tsp cayenne. Stir and cook 30 seconds.
  4. Add the diced tomatoes, 2 cups chicken broth, kidney beans, and cannellini beans. Scrape the pot bottom, bring to a boil, then reduce to low and simmer uncovered for 20 minutes. Taste and adjust salt.
  5. Ladle into bowls and top with sour cream, shredded cheddar, and sliced green onions.

Notes

This chili is genuinely better the next day, so making it 24 hours ahead is a smart move if you have time. When reheating, add a small splash of broth to bring the consistency back since it thickens overnight in the fridge. The cannellini beans are softer than the kidney beans, so be gentle when stirring toward the end to keep a few of them whole.
