Taco Bell Mexican Pizza Recipe

Ingredients
  

  • 1 lb ground beef (80/20)
  • 2 tbsp taco seasoning
  • 3 tbsp water
  • 6 small flour tortillas (6-inch)
  • 1/2 cup vegetable oil
  • 1/2 cup refried beans
  • 1/2 cup taco bell-style pizza sauce
  • 1 cup shredded Mexican blend cheese
  • 2 medium roma tomatoes, diced
  • 3 green onions, sliced
  • 1/4 cup sliced black olives
  • Sour cream, for serving

Method
 

  1. Cook the 1 lb ground beef in a skillet over medium-high heat for 7 minutes, drain most of the fat, then add the 2 tbsp taco seasoning and 3 tbsp water and simmer for 2 minutes.
  2. Heat the 1/2 cup vegetable oil in a small skillet to 350°F (175°C) and fry all 6 tortillas one at a time for 45 seconds per side until golden and rigid; drain on paper towels.
  3. Place 3 fried tortillas on a baking sheet; spread about 2 tbsp of the 1/2 cup refried beans on each, then top with the seasoned beef divided evenly.
  4. Set the remaining 3 tortillas on top, spread the 1/2 cup pizza sauce across them, and cover with the 1 cup shredded Mexican blend cheese.
  5. Broil 6 inches from the heat on high for 2 to 3 minutes until the cheese is melted and bubbling, then immediately top with the diced roma tomatoes, sliced green onions, and black olives; serve with sour cream on the side.

Notes

The pizza sauce is the one ingredient worth getting right — a plain enchilada sauce mixed with a few dashes of hot sauce is the closest you'll find to the original. These are best eaten right away while the tortillas are still crisp; if you're making them for a crowd, fry the tortillas and brown the beef ahead of time, then assemble and broil just before serving.
