Taco Bell Burrito Recipe

Ingredients
  

  • 1 lb (450g) ground beef, 80/20
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp water
  • 1 cup (240g) refried beans, canned
  • ½ cup (120ml) sour cream
  • ½ cup (120g) shredded cheddar cheese
  • ½ cup (80g) cooked white rice
  • 4 large (10-inch / 25cm) flour tortillas

Method
 

  1. Cook the ground beef in a large skillet over medium-high heat for 6 to 8 minutes, breaking it up until browned. Drain most of the fat, add all the spices and 3 tbsp water, stir, and cook for 2 more minutes until the water absorbs.
  2. Warm each tortilla in a dry skillet over medium heat for 20 to 30 seconds per side. In the same skillet, stir the refried beans over low heat for 2 to 3 minutes until warm and spreadable.
  3. Spread 2 tbsp refried beans down the center of each tortilla, then layer on a quarter of the beef, 2 tbsp rice, 2 tbsp cheese, and 2 tbsp sour cream in a compact column.
  4. Fold in the sides and roll from the bottom up into a tight cylinder. Sear seam-side down in a dry skillet over medium heat for 1 to 2 minutes per side until golden.
  5. Place on plates seam-side down, cut one diagonally to show the filling, and serve with a spoonful of sour cream and pickled jalapeños on the side.

Notes

These burritos are best eaten right away while the exterior is still slightly crisp. If you're making them for a group, keep finished burritos wrapped in foil in a low oven at 200°F (93°C) while you sear the rest. The seasoning blend here is intentionally mild, so taste the beef before rolling and add a pinch more salt or chili powder if you want more punch.
