Taco Bell Black Bean Seasoning Recipe

Ingredients
  

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 2 tbsp olive oil
  • 1/2 cup white onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup vegetable broth
  • 1 tsp apple cider vinegar
  • 1 tbsp fresh cilantro, chopped

Method
 

  1. Heat 2 tbsp olive oil in a medium saucepan over medium heat. Add 1/2 cup diced onion and cook for 4 minutes until softened, then stir in 3 cloves minced garlic for 1 minute.
  2. Add 1 tsp cumin, 1 tsp smoked paprika, 1/2 tsp chili powder, 1/2 tsp onion powder, 1/4 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper. Stir constantly for 30 seconds until the spices are fragrant.
  3. Add 2 drained cans of black beans and 1/2 cup vegetable broth. Bring to a gentle simmer and cook uncovered for 10 to 12 minutes, stirring occasionally, until the liquid reduces and the sauce thickens.
  4. Remove from heat, stir in 1 tsp apple cider vinegar, and adjust salt to taste. Transfer to a serving bowl and top with 1 tbsp chopped fresh cilantro.

Notes

These beans keep and reheat well, which makes them worth making on a Sunday for meals later in the week. The smoked paprika is the one ingredient I would not skip or substitute with regular paprika; it's what gives the beans that slightly smoky quality.
