Taco Bell Baja Sauce Recipe

Ingredients
  

  • ½ cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp chipotle peppers in adobo sauce, finely minced
  • 1 tsp adobo sauce (from the can)
  • 1 tbsp fresh lime juice
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp smoked paprika
  • ¼ tsp cumin
  • ¼ tsp salt
  • Pinch of cayenne (optional)

Method
 

  1. Mince 1 tbsp chipotle peppers in adobo sauce as finely as possible until almost paste-like, about 2 to 3 minutes of knife work.
  2. Add the mayonnaise, sour cream, adobo sauce, lime juice, minced chipotle, garlic powder, onion powder, smoked paprika, cumin, salt, and cayenne to a bowl and whisk for 1 minute until smooth and uniformly orange.
  3. Taste and adjust salt or lime juice, then transfer to a sealed container and refrigerate for at least 20 minutes.
  4. Pour into a small serving bowl, drizzle a few drops of adobo sauce on top, and dust lightly with smoked paprika before serving.

Notes

This sauce is easy to make milder or spicier, so taste it before you chill it and make the call then. It thickens slightly overnight in the fridge, so if it feels too thick after storing, stir in ½ tsp of lime juice to loosen it. A double batch scales perfectly and keeps for up to a week, which makes it worth doing on a Sunday for the whole week ahead.
