Subway Turkey Sandwich Recipe

Ingredients
  

  • 2 sub rolls (hoagie rolls), split
  • 12 oz sliced deli turkey breast, thin sliced
  • 4 slices provolone cheese
  • 1 cup shredded iceberg lettuce
  • 1 tomato, sliced
  • 1/2 cucumber, sliced thin
  • 1/4 red onion, sliced thin
  • 1/4 green bell pepper, sliced thin
  • 2 tbsp mayonnaise
  • 1 tbsp yellow mustard
  • 1 tsp red wine vinegar
  • 1 tsp olive oil
  • Salt and pepper, to taste

Method
 

  1. Split the sub rolls and toast under the broiler for about 3 minutes, until the edges turn golden.
  2. Lay the provolone on the bottom half while the roll is warm, then layer the turkey on top.
  3. Spread mayonnaise and mustard on the top half, then drizzle olive oil and red wine vinegar over the turkey.
  4. Add the lettuce, tomato, cucumber, onion, and green pepper, season with salt and pepper, close, and slice diagonally.

Notes

If you're packing these for lunch the next day, keep the tomato and vinegar in a small separate container and add them right before eating so the bread doesn't turn soft. This recipe doubles easily if you're feeding more than two people, just keep everything in the same ratio.
