Ingredients

  • 4 Italian hoagie rolls (6-inch)
  • 16 slices pepperoni
  • 12 slices Genoa salami
  • 12 slices spicy soppressata or hot capicola
  • 8 slices provolone cheese
  • 2 cups shredded iceberg lettuce
  • 1 large tomato, sliced thin
  • 1/2 red onion, sliced thin
  • 1/4 cup pickled banana peppers, sliced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp mayonnaise (optional)

Method

  1. Broil the split rolls for about 2 minutes until the cut edges are light golden and crisp.
  2. Layer the pepperoni, salami, and soppressata onto the rolls, top with provolone, and broil 1 to 2 minutes until melted and blistered.
  3. Add the lettuce, tomato, red onion, and banana peppers over the warm meat and cheese.
  4. Whisk the olive oil, vinegar, oregano, salt, and pepper, drizzle over the sandwiches, spread mayonnaise if using, close, and slice on a diagonal.

Notes

If you're making these for a crowd, toast all the rolls and melt the cheese in batches on one big sheet pan so everything stays warm at the same time. Dry your tomato slices with a paper towel before adding them, it's the easiest way to keep the bread from getting soggy.
