Subway Seafood and Crab Sandwich Recipe

Ingredients
  

  • 12 oz imitation crab meat (surimi)
  • 6 oz cooked small shrimp
  • 3/4 cup mayonnaise
  • 4 tsp sweet pickle relish
  • 2 tsp lemon juice
  • 1/2 tsp Old Bay seasoning
  • 1/2 tsp black pepper
  • 4 sub rolls (6-inch)
  • 4 slices provolone cheese
  • 2 cups shredded iceberg lettuce
  • 1 cup diced tomato
  • 1/2 cup thinly sliced cucumber

Method
 

  1. Chop the imitation crab and shrimp into 1/2-inch pieces.
  2. Whisk the mayonnaise, relish, lemon juice, Old Bay, and pepper into a smooth dressing.
  3. Fold the chopped seafood into the dressing and chill for 5 minutes.
  4. Toast the split rolls under the broiler for 2 to 3 minutes, melt the cheese, layer with lettuce, tomato, and cucumber, then top with the seafood salad and slice.

Notes

Make the seafood salad a day ahead if you can. It gives the relish and Old Bay time to settle in, and the flavor is noticeably better than eating it fresh the same hour. Keep the bread and vegetables separate from the salad until right before serving so the sandwich doesn't turn soggy.
