Subway Italian Herb and Cheese Bread Recipe

Ingredients
  

  • 3 1/2 cups (440 g) bread flour
  • 1 cup (240 ml) warm water (110°F/43°C)
  • 2 1/4 tsp active dry yeast
  • 1 tbsp sugar
  • 1 1/2 tsp salt
  • 2 tbsp olive oil
  • 2 tbsp Italian seasoning, divided
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 egg, beaten

Method
 

  1. Stir the warm water, sugar, and yeast together and let sit for 5 to 8 minutes until foamy.
  2. Mix in the flour, salt, olive oil, and 1 tbsp of the Italian seasoning, then knead for about 8 minutes until smooth.
  3. Shape into a ball and let rise in a warm spot for about 45 minutes, until doubled.
  4. Preheat the oven to 375°F (190°C), divide the dough into 2 loaves, let rise again for 20 to 25 minutes, then brush with egg and top with mozzarella, remaining Italian seasoning, and parmesan.
  5. Bake for 22 to 25 minutes, until golden and the internal temperature reaches 200-205°F (93-96°C), then slice and serve warm.

Notes

If your kitchen runs cold, the first rise can easily take closer to an hour, so go by how the dough looks and feels rather than the clock. This dough also freezes well right after shaping, before the second rise, just thaw it in the fridge overnight and let it come to room temperature before baking.
