- Stir the yeast and 1 tbsp honey into the warm water and let it foam for about 8 minutes.
- Whisk the flour, oats, and salt together, then mix in the yeast mixture, remaining honey, molasses, and melted butter, and knead until smooth, about 8 minutes.
- Let the dough rise in a greased bowl for about 60 minutes, until doubled.
- Shape the dough into a loaf, place it in a greased 9x5-inch pan, and let it rise again for about 40 minutes.
- Preheat the oven to 350°F (175°C), brush the loaf with the remaining honey, top with the reserved oats, and bake for 30 minutes, until golden and 190°F (88°C) inside.
Notes
If you want to get ahead, you can make the dough through the first rise, punch it down, and refrigerate it overnight, then shape and do the second rise the next day, adding about 20 extra minutes since the dough will be cold. Don't skip checking the internal temperature the first time you make this, since ovens vary and a pale-looking loaf can still be underdone in the center.
