Subway Garlic Aioli Recipe

Ingredients
  

  • 1 cup mayonnaise
  • 4 cloves garlic, finely grated
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1/2 tsp Dijon mustard
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Grate the 4 cloves of garlic finely using a microplane or box grater.
  2. Whisk the mayonnaise, garlic, lemon juice, Dijon mustard, sugar, salt, and pepper together until smooth and evenly colored.
  3. Slowly drizzle in the olive oil while whisking constantly, until the sauce thickens and turns glossy.
  4. Transfer to a serving bowl, swirl the top, and finish with a drizzle of olive oil and a crack of black pepper.

Notes

Give the aioli at least 15 minutes in the fridge before serving so the garlic has time to mellow out. If you're doubling the batch for a party, taste it again after resting since the salt and garlic levels can shift slightly once it sits.
