- Whisk the flour, granulated sugar, baking powder, and salt together in a medium bowl. Add the egg, milk, and vanilla extract and stir until just combined, about 20 strokes. Fold in the diced strawberries.
- Heat 2 inches of vegetable oil in a heavy pot over medium to medium-high until it reaches 350°F (175°C).
- Drop heaping tablespoon portions of batter into the oil in batches of 5 to 6. Fry for 3 to 4 minutes, turning once or twice, until deep amber-gold all over. Drain on a paper towel-lined plate and return the oil to 350°F (175°C) between batches.
- Stir the strawberry jam, water, and lemon juice together in a small bowl until smooth.
- Dust the warm bites with powdered sugar and serve immediately with the dipping sauce on the side.
Notes
These are best eaten within 20 minutes of frying while the crust is still crisp. If you want to get ahead, mix your dry ingredients the night before and add the wet ingredients and strawberries just before you fry. The dipping sauce keeps in the fridge for up to a week in a sealed jar.
