Strawberry Matcha Latte Recipe

Ingredients
  

  • 1 tsp matcha powder
  • 2 tbsp hot water (about 175°F / 80°C)
  • 1 cup milk of your choice
  • 1/2 cup fresh or frozen strawberries
  • 2 tbsp granulated sugar
  • 2 tbsp water
  • 1/2 tsp vanilla extract
  • 1 cup ice

Method
 

  1. Combine the strawberries, sugar, and 2 tbsp water in a small saucepan over medium heat. Simmer for 8 to 10 minutes, stir in the vanilla extract, then strain and cool for at least 5 minutes.
  2. Sift the matcha powder into a small bowl, add the hot water at 175°F (80°C), and whisk briskly for 30 seconds until smooth and slightly frothy.
  3. Froth the milk for 20 to 30 seconds until lightly airy.
  4. Fill a tall glass with ice, pour the cooled strawberry syrup over the ice, then slowly pour the matcha over the back of a spoon, followed by the frothed milk.
  5. Garnish with a fresh strawberry on the rim or a few slices on the foam and serve immediately.

Notes

The syrup is the part most worth making in advance — it keeps for a week and the drink itself then takes under 5 minutes. If your matcha is clumping, sifting before whisking is the fix. Taste the syrup before it cools; if it is too tart, stir in an extra half teaspoon of sugar while it is still warm.
