Steak Gorgonzola Alfredo Recipe

Ingredients
  

  • 1 lb fettuccine
  • 1.5 lb sirloin steak (about 3/4 inch thick)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1.5 cups grated Parmesan
  • 3/4 cup crumbled gorgonzola, divided
  • 1/4 cup sun-dried tomatoes, chopped
  • 3 tbsp balsamic glaze
  • 2 tbsp fresh spinach, roughly chopped
  • 1 tbsp fresh flat-leaf parsley, chopped

Method
 

  1. Pat the sirloin dry and season with 1 tsp kosher salt and 1/2 tsp black pepper. Heat 1 tbsp olive oil in a heavy skillet over high heat until smoking, then sear the steak 3 to 4 minutes per side until it reaches 130°F (54°C) for medium-rare. Rest on a cutting board for 8 minutes.
  2. Cook 1 lb fettuccine in well-salted boiling water 1 minute less than the package directs. Reserve 1/2 cup pasta water, then drain.
  3. In the same skillet over medium heat, melt 2 tbsp unsalted butter. Cook 4 cloves minced garlic for 1 minute. Add 2 cups heavy cream and simmer 3 to 4 minutes. Stir in 1.5 cups Parmesan and 1/2 cup gorgonzola until smooth.
  4. Add the drained fettuccine and 2 tbsp spinach to the sauce. Toss over low heat for 1 minute. Stir in the remaining 2 tbsp butter and 1/4 cup sun-dried tomatoes.
  5. Slice the rested steak thinly against the grain. Divide the pasta between plates, top with the steak, scatter the remaining 1/4 cup gorgonzola and 1 tbsp parsley, then drizzle 3 tbsp balsamic glaze over each plate.

Notes

This dish is best eaten right away since the Alfredo sauce tightens quickly once it cools. If you're cooking for a crowd and need a little buffer, keep the sauce on the lowest heat setting and stir in a tablespoon of cream every few minutes. The balsamic glaze varies a lot by brand — taste yours before drizzling; if it's very sweet, start with 2 tbsp and add more to taste.
