Starbucks Oat Bar Recipe

Ingredients
  

  • 2 cups rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp fine salt
  • 1/3 cup honey
  • 1/3 cup packed light brown sugar
  • 1/3 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup dried cranberries
  • 1/4 cup pepitas (pumpkin seeds)

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper. Whisk together the melted butter, honey, brown sugar, egg, and vanilla extract until smooth.
  2. Add the rolled oats, flour, baking soda, and salt to the bowl and stir until no dry streaks remain.
  3. Fold in the dried cranberries and pepitas until evenly distributed.
  4. Press the batter evenly into the prepared pan and bake for 25 to 28 minutes until the top is deep golden brown.
  5. Cool in the pan for 20 minutes, lift out using the parchment overhang, slice into 9 bars, and serve.

Notes

These bars are easier to cut cleanly if you let them cool the full 20 minutes before slicing. If you are using a glass baking dish, add 3 to 4 minutes to the bake time since glass conducts heat more slowly than metal. The batter will look very thick before baking; that is expected.
