- Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper. Whisk together the melted butter, honey, brown sugar, egg, and vanilla extract until smooth.
- Add the rolled oats, flour, baking soda, and salt to the bowl and stir until no dry streaks remain.
- Fold in the dried cranberries and pepitas until evenly distributed.
- Press the batter evenly into the prepared pan and bake for 25 to 28 minutes until the top is deep golden brown.
- Cool in the pan for 20 minutes, lift out using the parchment overhang, slice into 9 bars, and serve.
Notes
These bars are easier to cut cleanly if you let them cool the full 20 minutes before slicing. If you are using a glass baking dish, add 3 to 4 minutes to the bake time since glass conducts heat more slowly than metal. The batter will look very thick before baking; that is expected.
