Starbucks Egg White Bites Copycat Recipe

Ingredients
  

  • 12 large egg whites
  • 1 cup cottage cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/3 cup roasted red peppers, patted dry and diced
  • 3 tbsp fresh spinach, finely chopped
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • Cooking spray

Method
 

  1. Heat the oven to 300°F (150°C) and place a roasting pan on the lower rack. Spray a 12-cup muffin tin with cooking spray. Blend the 12 egg whites, 1 cup cottage cheese, 1/2 cup Monterey Jack, 1/2 tsp salt, 1/4 tsp black pepper, and 1/4 tsp garlic powder on high for 30 seconds until completely smooth.
  2. Pat the 1/3 cup roasted red peppers dry and dice them. Finely chop the 3 tbsp spinach. Scatter both into the muffin cups, dividing evenly across all 12.
  3. Pour the egg mixture into each cup, filling 3/4 of the way. Tap the tin gently on the counter to release air bubbles.
  4. Set the muffin tin on the roasting pan in the oven and pour 2 cups of hot water into the roasting pan. Bake at 300°F (150°C) for 23 to 27 minutes, until the tops are just set with a slight jiggle in the center.
  5. Run a knife around each cup and turn the bites out onto a wire rack or plate. Garnish with a pinch of flaky salt and a few strips of roasted red pepper and serve warm.

Notes

These keep well in the fridge for up to 4 days, so making a full batch on the weekend is worth it. The water bath is not optional if you want the smooth texture; it's what keeps the low oven from drying out the edges. If your bites stick to the pan, give it another 30 seconds before trying to release them, and they'll usually come free cleanly.
