- Add the mayonnaise, hot sauce, cayenne, smoked paprika, garlic powder, onion powder, honey, and apple cider vinegar to a small bowl and whisk for about 1 minute until the color is uniform and no streaks remain.
- Add the salt, taste the sauce on a small piece of bread or cracker, and adjust with extra hot sauce for more heat or a touch more honey to soften it.
- Transfer to a serving bowl, drag a spoon through the top to create a swirl, drizzle a few drops of hot sauce into the swirl, and serve.
Notes
If you have 30 minutes before serving, cover the bowl and let the sauce rest in the fridge. The heat and smokiness come through more clearly once the spices have had a few minutes to sit together. This recipe makes enough for 2 sandwiches; scale it up if you're feeding a crowd.
