Southwest Ranch Dressing Recipe

Ingredients
  

  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup buttermilk
  • 2 tbsp minced chipotle peppers in adobo
  • 1 tbsp adobo sauce
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1 tbsp fresh lime juice
  • 2 tbsp chopped fresh cilantro
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Whisk the mayonnaise, sour cream, and buttermilk together until smooth.
  2. Stir in the chipotle peppers, adobo sauce, smoked paprika, cumin, garlic powder, onion powder, and cayenne pepper.
  3. Fold in the lime juice, cilantro, salt, and black pepper, tasting and adjusting as needed.
  4. Chill for at least 30 minutes, then transfer to a serving bowl and top with a sprinkle of paprika and cilantro.

Notes

This dressing thickens as it chills, so if you're making it ahead for a party, hold back a tablespoon of buttermilk and stir it in right before serving. It keeps well for 5 days, and honestly tastes better on day 2 once the spices have had time to settle in.
