Sonic Ultimate Meat & Cheese Burrito Recipe

Ingredients
  

  • 1 lb ground beef (80/20)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups frozen diced hash browns
  • 1 tbsp vegetable oil
  • 6 large eggs
  • 2 tbsp butter
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 4 large flour tortillas (10-inch burrito size)
  • 1/4 cup sour cream
  • 1/4 cup salsa

Method
 

  1. Cook the ground beef over medium-high heat for 6 to 8 minutes, drain the fat, then stir in the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper and cook for 1 more minute.
  2. In the same skillet with the vegetable oil over medium-high heat, cook the frozen diced hash browns undisturbed for 4 minutes, then flip and cook for another 3 to 4 minutes until crispy and golden.
  3. In a clean skillet over medium-low heat, melt the butter, add the whisked eggs, and fold gently for 2 to 3 minutes until just set.
  4. Sprinkle the cheddar and Monterey Jack onto the center of each tortilla and warm them in the microwave for 20 to 25 seconds until the cheese softens and the tortillas are pliable.
  5. Divide the beef, hash browns, and eggs among the 4 tortillas, add 1 tbsp sour cream and 1 tbsp salsa to each, then fold the sides in and roll tightly from the bottom up.
  6. Sear the burritos seam-side down in a dry skillet over medium heat for 1 to 2 minutes per side until golden, then slice in half on a diagonal and serve cut-side up.

Notes

The beef and hash browns can both be made up to 3 days ahead and stored separately in the fridge, which makes weekday mornings much faster. Scramble the eggs fresh each time though — reheated eggs in a burrito get rubbery quickly. If your tortillas tear when you try to roll them, they just need another few seconds of heat.
