- Stir together the 1 tbsp coconut syrup, 1 tbsp lime juice, and 3 to 4 drops of blue food coloring in a tall glass until the color is fully blended with no streaks.
- Fill the glass with 1 cup of crushed ice, leaving about 1 inch of space below the rim.
- Pour the 2 cups of lemon-lime soda slowly over the back of a spoon to preserve carbonation, then give the drink 2 to 3 gentle stirs from the bottom to distribute the color.
- Top with a maraschino cherry and serve immediately with a straw.
Notes
The coconut syrup and coloring base can be mixed up to 3 days ahead and stored in the fridge, so you can build this in under a minute when you want one. Gel food coloring is worth the small investment if you plan to make this regularly; it keeps its vivid turquoise color far better than liquid drops. Do not over-stir after adding the soda or you will lose most of the fizz.
