- Beat the butter, brown sugar, and granulated sugar together until light and fluffy, about 2 minutes.
- Beat in the eggs one at a time, then mix in the vanilla extract until smooth.
- Preheat the oven to 350°F (175°C), whisk the flour, baking soda, cinnamon, and salt together, stir into the wet mixture, then fold in the oats and dried berries.
- Scoop into 2-tbsp mounds on a parchment-lined sheet and bake for 11 to 13 minutes, until the edges are golden.
- Cool on the sheet for 5 minutes, then move to a wire rack and serve.
Notes
If you like a thicker, bakery-style cookie, chill the scooped dough for 10 minutes before it goes in the oven. This dough also freezes well raw, so it's worth doubling the batch and freezing half for later.
