Sawmill Gravy Recipe

Ingredients
  

  • 8 oz breakfast sausage
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/8 tsp cayenne pepper

Method
 

  1. Cook the 8 oz breakfast sausage in a large skillet over medium heat, breaking it into crumbles, for 6 to 8 minutes until browned. Do not drain the fat.
  2. Sprinkle the 3 tbsp flour over the sausage and stir constantly for 90 seconds until the flour is lightly golden and smells nutty.
  3. Pour in the 2 cups whole milk in small additions, stirring after each. Add the 1/2 tsp black pepper, 1/4 tsp salt, and 1/8 tsp cayenne. Bring to a gentle simmer and cook 4 to 6 minutes, stirring frequently, until the gravy coats the back of a spoon.
  4. Ladle over split biscuits and finish with a crack of black pepper.

Notes

This gravy thickens as it cools, so pull it off the heat when it is just slightly thinner than you want it on the plate. Different sausage brands vary in saltiness, so always taste before adding the final salt. Leftovers reheat well with a small splash of milk stirred in.
