Red Lobster Piña Colada Dipping Sauce Recipe

Ingredients
  

  • 1/2 cup cream of coconut
  • 1/4 cup crushed pineapple, drained
  • 2 tbsp sour cream
  • 1 tbsp pineapple juice
  • 1/4 tsp crushed red pepper flakes

Method
 

  1. Drain the crushed pineapple well, pressing out as much liquid as possible. Reserve 1 tbsp of the juice.
  2. Add the cream of coconut, crushed pineapple, sour cream, pineapple juice, and red pepper flakes to a small bowl and whisk for 1 minute until smooth with no streaks.
  3. Cover and refrigerate for at least 20 minutes, then transfer to a serving bowl with a swirl on top and serve cold alongside shrimp.

Notes

This sauce can be made up to 24 hours ahead and kept covered in the fridge, which actually improves the flavor. If it thickens too much overnight, stir in a teaspoon of pineapple juice before serving. The red pepper flakes give only a faint warmth, so don't leave them out thinking they'll make it spicy.
