Raspberry Cheesecake Cookies Recipe

Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 oz cream cheese, cold and cubed
  • 1 cup white chocolate chips
  • 1/3 cup raspberry jam or preserves

Method
 

  1. Preheat the oven to 350°F (175°C). Beat the butter with both sugars until light, about 2 minutes, then beat in the egg and vanilla.
  2. Whisk the flour, baking soda, and salt together, then mix into the wet ingredients until no dry streaks remain.
  3. Fold in the white chocolate chips until evenly distributed through the dough.
  4. Scoop dough into 2 tbsp portions, press cream cheese cubes into the tops, dollop with jam, and swirl with a toothpick.
  5. Bake for 11 to 13 minutes until edges are set, cool on the sheet for 5 minutes, then drizzle with extra jam.

Notes

If you want the cleanest jam swirl, use jam straight from the fridge rather than at room temperature, it holds its line better when you drag the toothpick through it. These also freeze well baked, just thaw at room temperature for about 20 minutes before eating.
