Queso Dip Recipe

Ingredients
  

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 8 oz American cheese, cubed
  • 4 oz sharp cheddar, shredded
  • 1 can (10 oz) diced tomatoes with green chiles (Ro-Tel), drained
  • 1 jalapeño, seeded and finely minced
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika
  • 1/4 tsp kosher salt
  • 2 tbsp pickled jalapeño slices

Method
 

  1. Melt 2 tbsp butter in a medium saucepan over medium heat, whisk in 2 tbsp flour, and cook for 90 seconds until pale gold.
  2. Pour in 1 cup whole milk a quarter at a time, whisking constantly, until the sauce thickens enough to coat a spoon, about 3 to 4 minutes.
  3. Reduce heat to medium-low, add 8 oz cubed American cheese and 4 oz shredded cheddar in stages, stirring until fully melted and smooth, about 2 to 3 minutes.
  4. Stir in the drained Ro-Tel, minced jalapeño, 1/2 tsp garlic powder, 1/2 tsp cumin, and 1/4 tsp smoked paprika; simmer on low for 3 to 4 minutes, then season with 1/4 tsp kosher salt.
  5. Pour into a warm serving bowl, top with 2 tbsp pickled jalapeño slices, and dust lightly with smoked paprika.

Notes

This queso is best served right away, but it reheats well if you add a little warm milk to loosen it. The biggest make-ahead mistake is reheating over high heat; keep it low and stir often or the cheese will separate. If you're serving a crowd, a small slow cooker on the warm setting is the easiest way to keep it at the right consistency without babysitting it.
