Prime Rib Recipe

Ingredients
  

  • 4 to 5 lb bone-in prime rib roast
  • 2 tbsp kosher salt
  • 1 tbsp coarsely ground black pepper
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter, softened
  • 2 sprigs fresh rosemary

Method
 

  1. Preheat oven to 450°F (230°C). Pat the roast dry, place fat-side up in a roasting pan, and press the combined rub (salt, pepper, garlic powder, onion powder, smoked paprika, thyme, and olive oil) firmly all over the surface. Tuck the rosemary sprigs underneath.
  2. Roast uncovered at 450°F (230°C) for 20 minutes until the outside is browned and a crust begins to form.
  3. Reduce oven temperature to 325°F (160°C) and continue roasting until the internal temperature is 5°F (3°C) below your target, about 1 hour 30 minutes to 2 hours for medium-rare at 130°F (54°C).
  4. Pull the roast from the oven and immediately press the 2 tbsp softened butter over the top; let it melt into the crust for 2 minutes.
  5. Tent loosely with foil and rest for 20 minutes, then carve against the bone into 3/4-inch slices and serve on a warm platter with pan drippings spooned over the top and a sprig of roasted rosemary alongside.

Notes

Pull the roast from the fridge about 45 minutes before it goes in the oven. A leave-in probe thermometer is the most reliable way to track doneness without opening the oven repeatedly. The rest period is not optional; cutting into the roast early will send the juices straight onto the cutting board instead of staying in the meat.
