Potato and Chive Egg Bites Recipe

Ingredients
  

  • 6 large eggs
  • 1 cup full-fat cottage cheese
  • 2 tbsp sour cream
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 3/4 cup frozen diced hash browns, thawed and dried
  • 3 tbsp fresh chives, finely chopped
  • 1 tbsp olive oil
  • 1/2 cup shredded Gruyère cheese

Method
 

  1. Preheat oven to 325°F (165°C). Blend the eggs, cottage cheese, sour cream, garlic powder, kosher salt, and black pepper on high for 30 seconds until completely smooth.
  2. Pour the blended mixture into a bowl. Stir in the thawed hash browns and chopped chives until evenly distributed.
  3. Brush a 12-cup muffin tin with olive oil. Fill 9 cups about 3/4 full with the egg mixture, then divide the shredded Gruyère over each filled cup.
  4. Bake on the center rack for 28 to 32 minutes, until the centres are just set and the cheese tops are golden brown at the edges.
  5. Run a knife around each bite to release them, lift onto a serving plate, and scatter a pinch of fresh chives over the top.

Notes

These are best eaten within the first 2 days for the creamiest texture, though they hold up well for 4. If you are making them for the week, slightly underbake by 2 minutes so they do not dry out when reheated. A silicone muffin mould makes releasing them much easier than a metal tin.
