Peach Green Tea Recipe

Ingredients
  

  • 2 green tea bags
  • 2 cups water (for steeping)
  • 1 cup white granulated sugar
  • 1 cup water (for the syrup)
  • 1 large ripe peach, pitted and roughly chopped
  • Ice
  • 4 to 6 lemon slices (optional)

Method
 

  1. Combine 1 cup sugar, 1 cup water, and the chopped peach in a small saucepan over medium heat. Simmer for 12 to 15 minutes until the sugar dissolves and the peach softens. Strain through a fine mesh sieve, pressing the fruit firmly, and let the syrup cool.
  2. Heat 2 cups water to 175°F (80°C), pour over the 2 green tea bags, and steep for exactly 3 minutes. Remove the bags without squeezing, then cool the tea to room temperature and refrigerate until cold.
  3. Fill a tall glass with ice, pour in ¾ cup chilled green tea, add 3 tbsp peach syrup, and stir gently 4 or 5 times.
  4. Add 1 to 2 lemon slices on top of the ice or on the rim and serve immediately.

Notes

The syrup batch makes enough for about 6 to 8 drinks, so you won't need to cook it every time. Green tea turns bitter fast if you steep it past 3 minutes, so set a timer the first time you make this. If your peach isn't very ripe, add an extra 2 tbsp of sugar to the syrup to compensate.
