Method
- Combine the 1 cup pineapple juice, 1 tbsp lime juice, and 1 tsp ginger syrup in a shaker with 4 ice cubes and shake for 15 seconds until cold.
- Fill a 16 oz glass with the 1 cup crushed ice and pour the shaken juice mixture over it, leaving 1.5 inches of room at the top.
- Slowly pour the 1/2 cup coconut milk down the inside edge of the glass to create a layer.
- Top with the 1/2 cup sparkling water, stir once slowly from the bottom up, and scatter the 1/4 cup freeze-dried pineapple pieces over the surface before serving.
Notes
This drink is best made and served right away. If you want to prep ahead, mix the pineapple juice, lime juice, and ginger syrup and keep it cold in the fridge for up to 2 days, then add the coconut milk and sparkling water when you're ready to drink it. Full-fat coconut milk gives the creamiest result, but light coconut milk works fine if that's what you have.
