Panera Mediterranean Veggie Sandwich Recipe

Ingredients
  

  • 4 slices focaccia bread (or 2 focaccia rolls, split in half)
  • 1/2 cup hummus
  • 1 medium cucumber, thinly sliced
  • 1 large tomato, sliced
  • 1/4 small red onion, thinly sliced
  • 1 cup baby spinach
  • 1/2 cup crumbled feta cheese
  • 1/4 cup jarred roasted red peppers, sliced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Toast the focaccia at 400°F (200°C) for about 5 minutes, until the edges are golden and crisp.
  2. Whisk the olive oil, red wine vinegar, salt, and pepper, then toss the cucumber and red onion in the dressing.
  3. Spread hummus on the focaccia, layer with spinach, tomato, the dressed cucumber and onion, roasted red peppers, and feta.
  4. Top with the second piece of focaccia, press gently, slice in half on a diagonal, and drizzle with any remaining dressing.

Notes

If you want to get ahead, slice the vegetables and mix the dressing up to a day in advance, then keep everything separate in the fridge and assemble right before serving so the bread stays crisp. No resting or chilling time is needed once it's built, it's meant to be eaten right away.
