Method
- Bloom the yeast and sugar in the warm water, then stir in the flour, remaining sugar, and salt into a shaggy dough.
- Knead the dough 8 minutes, work in the cinnamon chips, and let it rise 60 minutes, until puffed.
- Divide into 8 pieces, shape into bagels with a stretched center hole, and rest 10 minutes.
- Boil the bagels in the honey water 60 seconds per side, then drain.
- Brush with egg, press on the cinnamon sugar topping, and bake at 425°F (220°C) for 20 to 22 minutes.
- Whisk the powdered sugar and milk into a glaze and drizzle over the warm bagels.
Notes
The dough needs a 60-minute rise after kneading and a 10-minute rest after shaping, neither of which is counted in the prep time above since it's hands-off. If your kitchen is cold, the rise may take closer to 75 minutes, just watch for the dough looking puffed rather than going by the clock.
