Overnight Oats Recipe

Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 1 cup unsweetened almond milk
  • 1/2 cup plain Greek yogurt
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1 pinch fine sea salt
  • 1/2 cup blueberries
  • 2 tbsp sliced almonds
  • 1 tsp honey (for topping)

Method
 

  1. Combine the rolled oats, almond milk, Greek yogurt, honey, vanilla extract, cinnamon, and salt in a jar or lidded bowl and stir for 30 seconds until fully mixed.
  2. Fold in the blueberries gently until distributed.
  3. Seal the jar and refrigerate for at least 6 hours or overnight.
  4. Stir the oats, scatter the sliced almonds on top, drizzle with the remaining 1 tsp honey, and serve cold.

Notes

These oats keep well for up to 3 days, so making a double or triple batch on a Sunday evening is genuinely worth it. The texture is at its best between 8 and 10 hours of soaking. If your oats look thicker than you'd like in the morning, stir in a splash of almond milk to loosen them up.
