Molasses Cookie Recipe

Ingredients
  

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/3 cup (75g) packed dark brown sugar
  • 1/4 cup (60ml) blackstrap molasses
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp fine salt
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground black pepper
  • 1/4 cup (50g) granulated sugar, for rolling

Method
 

  1. Beat the butter, granulated sugar, and dark brown sugar together on medium speed for 3 minutes until pale and fluffy.
  2. Add the molasses, egg, and vanilla extract; beat on medium-low for 1 minute until smooth, scraping the bowl once.
  3. Add the flour, baking soda, salt, cinnamon, ginger, cloves, and black pepper; mix on low just until no dry streaks remain. Cover and refrigerate for 30 minutes.
  4. Heat the oven to 375°F (190°C) and line 2 baking sheets with parchment. Scoop dough into 1.5-tablespoon balls, roll in the granulated sugar, and place 2 inches apart on the sheets.
  5. Bake one sheet at a time on the center rack for 10 to 11 minutes until the tops are crackled and edges are set. Cool on the pan for 5 minutes, then transfer to a serving plate and scatter a pinch of coarse sugar over the tops while still warm.

Notes

The 30-minute chill is built into the prep time. If you want to get ahead, the dough can sit in the fridge for up to 48 hours before baking, which actually deepens the spice flavor. Blackstrap molasses can vary in intensity by brand, so taste the dough before chilling and add an extra pinch of cinnamon if it needs it.
