Minion Pancakes Recipe

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups buttermilk
  • 2 large eggs
  • 3 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • Yellow gel food coloring
  • Blue gel food coloring
  • 1/2 cup mini chocolate chips
  • 1/4 cup chocolate syrup
  • 4 strips banana, sliced thin
  • Whipped cream, for serving

Method
 

  1. Whisk the dry ingredients together, whisk the wet ingredients separately, then combine them with 12 to 15 gentle folds until just combined and still slightly lumpy.
  2. Divide the batter into a large portion (3/4) and a small portion (1/4). Stir yellow gel coloring into the large portion and blue gel coloring into the small portion until each is evenly tinted.
  3. On a lightly buttered griddle over medium heat, cook the yellow pancakes using 1/3 cup batter each for 2 to 3 minutes on the first side and 1 to 2 minutes on the second side until golden.
  4. On the same greased griddle over medium heat, pour the blue batter into small ovals using 2 tbsp each, cooking for 1 minute on the first side and 30 seconds on the second side.
  5. Assemble each plate with 1 yellow pancake, 1 blue oval at the bottom, banana slice goggles, and mini chocolate chip pupils and buttons.
  6. Pipe chocolate syrup outlines around the goggles and a curved mouth, add a dot of whipped cream, pipe hair lines, and serve immediately.

Notes

The decoration goes on while the pancakes are still warm so the toppings stick. If you are making this for a crowd, keep finished plain pancakes in a 200°F (93°C) oven on a baking sheet while you cook the rest, then decorate all of them at once just before serving.
