McRib Sandwich Recipe

Ingredients
  

  • 1 lb ground pork (80/20)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 3/4 cup barbecue sauce (smoky style)
  • 1 tbsp apple cider vinegar
  • 1 tsp Worcestershire sauce
  • 4 hoagie-style buns (about 6 inches long)
  • 1/2 medium white onion, sliced thin
  • 40 dill pickle chips

Method
 

  1. Combine ground pork, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix for about 30 seconds, then shape into 4 oblong patties roughly 6 inches long, 2 1/2 inches wide, and 1/2 inch thick.
  2. Stir together barbecue sauce, apple cider vinegar, and Worcestershire sauce in a small bowl. Set aside.
  3. Heat a grill pan over medium-high for 2 minutes. Cook patties 4 minutes on the first side, flip, and cook 3 more minutes.
  4. Pour about 3/4 of the sauce over the patties. Reduce heat to medium and cook 2 more minutes, turning once, until patties reach 160°F (71°C) internally.
  5. Toast bun halves cut-side down in the same pan over medium heat for 1 minute until lightly golden.
  6. Spread reserved sauce on the bottom bun, top with a glazed pork patty, 10 dill pickle chips, and sliced white onion. Serve open-faced for serving.

Notes

These patties hold their shape better if you chill them for 15 minutes after shaping and before cooking, especially on a warm day. The sauce can be mixed up to a week ahead and kept in the fridge. If you are scaling up for a crowd, cook the patties in batches rather than crowding the pan, since overlapping will steam the meat instead of searing it.
