Method
- Squeeze the limes and lemons, then strain the juices through a fine mesh strainer into a large measuring jug to remove seeds and pulp.
- Add the agave nectar and fine sea salt to the jug and whisk for about 30 seconds until the agave is fully dissolved and no longer sitting in a separate layer.
- Add the cold water and orange extract, then stir for 20 seconds. Taste and adjust with a few extra drops of lime juice or a teaspoon more agave if needed.
- Fill a salt-rimmed glass with ice, pour the mix over it, add tequila to taste, and finish with a lime wedge on the rim before serving.
Notes
This mix keeps for up to 7 days in the fridge, so making a double batch ahead of a gathering saves a lot of last-minute work. The orange extract is strong — measure it carefully rather than eyeballing it, because a few extra drops will make the drink taste more like orange than lime. Stir the mix before each pour if it has been sitting for more than a few hours.
