Mango Habanero Wings Recipe

Ingredients
  

  • 2 lbs chicken wings, split into flats and drumettes, patted dry
  • 1 tbsp baking powder, aluminum-free
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 ripe mango, peeled and chopped, about 1 cup
  • 2 habanero peppers, stemmed
  • 1/3 cup honey
  • 2 tbsp unsalted butter
  • 2 tbsp rice vinegar
  • 2 cloves garlic
  • 1 tbsp lime juice
  • 1/4 tsp salt, for the sauce

Method
 

  1. Preheat the oven to 450°F (230°C). Toss the dried wings with the baking powder, salt, and pepper, then arrange them skin-side up on a wire rack over a baking sheet.
  2. Bake for 45 minutes, flipping once at the halfway point, until the skin is deep golden and the thickest piece reaches 165°F (74°C).
  3. Blend the mango, habaneros, garlic, lime juice, and salt until smooth.
  4. Simmer the puree with the honey, rice vinegar, and butter over medium heat for 8 minutes, until it coats the back of a spoon.
  5. Toss the hot wings in the warm sauce until fully coated, then serve right away.

Notes

If you like a milder sauce, remove the seeds and ribs from the habaneros before blending, that alone cuts a lot of the heat. The wire rack really does matter for crisp skin, if you don't have one you can flip the wings more often on a plain sheet pan instead.
