KFC Oven Baked Fried Chicken Copycat Recipe

Ingredients
  

  • 1.5 kg bone-in, skin-on chicken pieces
  • 240 ml buttermilk
  • 1 large egg
  • 120 g plain flour
  • 60 g fine breadcrumbs
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/2 tsp celery salt
  • 1/2 tsp white pepper
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground ginger
  • 3 tbsp neutral oil

Method
 

  1. Whisk 240 ml buttermilk and 1 egg together, add chicken pieces, coat fully, cover and refrigerate for at least 1 hour.
  2. Combine 120 g flour, 60 g breadcrumbs, and all spices in a shallow dish and stir until evenly mixed.
  3. Preheat oven to 200°C (400°F) with a wire rack over a baking tray. Lift chicken from the soak, let excess drip off, press firmly into the coating, and arrange on the rack. Drizzle 3 tbsp oil over the tops.
  4. Bake for 45 to 55 minutes until the coating is deep golden brown and the internal temperature reaches 74°C (165°F).
  5. Transfer to a serving plate, rest for 5 minutes, then finish with a sprinkle of flaky salt and fresh thyme sprigs.

Notes

The buttermilk soak time isn't included in the prep or cook time above, so factor that in when you're planning dinner. Overnight in the fridge gives you the best result, but 1 hour is the minimum. If your chicken pieces vary a lot in size, check the smaller ones earlier so nothing overcooks while you're waiting on the larger pieces.
