KFC Nashville Hot Sauce Recipe

Ingredients
  

  • 3 tbsp cayenne pepper
  • 1 tbsp brown sugar, packed
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ½ cup vegetable oil
  • 1 tbsp pickle juice

Method
 

  1. Warm the ½ cup vegetable oil in a small saucepan over medium-low heat for about 2 minutes until it shimmers, then add the 3 tbsp cayenne, 1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp onion powder, and ½ tsp black pepper and stir for 60 seconds.
  2. Remove from heat, stir in the 1 tbsp brown sugar and 1 tbsp pickle juice until the sugar fully dissolves, about 30 seconds.
  3. Brush the warm sauce generously over fried chicken and serve immediately with pickle slices on top.

Notes

This sauce is best used warm, right after you make it. If you're cooking for a crowd, make the sauce first and keep it in the pan on the lowest heat setting, stirring occasionally, while you finish frying the chicken. The spice level is bold with the full cayenne amount, so taste after step 2 and add a pinch more brown sugar if you want to pull the heat back a little.
