KFC French Fries Recipe

Ingredients
  

  • 4 large russet potatoes
  • 2 cups vegetable oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp fine salt
  • 1/2 tsp black pepper
  • 1 tbsp cornstarch
  • Cold water, for soaking

Method
 

  1. Peel and cut the potatoes into 1/4-inch batons, soak in cold water for 20 minutes, drain, and pat completely dry with a kitchen towel.
  2. Combine the garlic powder, onion powder, paprika, salt, and black pepper in a small bowl; divide the mix in half. Toss the dry potatoes with half the spice blend and the 1 tbsp cornstarch.
  3. Heat the vegetable oil in a heavy-bottomed pot to 325°F (160°C). Fry the potatoes in 2 batches, 4 to 5 minutes per batch, until pale and just softened. Transfer to a wire rack and rest for 5 minutes.
  4. Raise the oil temperature to 375°F (190°C). Fry the rested potatoes in 2 batches for 2 to 3 minutes each until pale golden with a set crust.
  5. Immediately toss the hot fries with the reserved spice blend, transfer to a serving tray, and serve.

Notes

The 5-minute rest between fries is the step most people skip, and it is also the reason most homemade fries turn out dense instead of fluffy inside. You can soak and dry the potatoes up to 4 hours ahead and keep them in the fridge until you are ready to fry.
