- Preheat the oven to 375°F (190°C). Stir the garlic powder, onion powder, black pepper, and salt into the mashed potatoes, then spread them in an even layer across the bottom of a 9x13-inch baking dish.
- Scatter the thawed corn over the potatoes, then pour the chicken gravy evenly over the entire surface.
- Spread the shredded chicken over the gravy layer and bake, uncovered, for 20 minutes until the gravy is bubbling at the edges.
- Remove the dish, scatter the shredded cheddar over the chicken, and bake for another 8 to 10 minutes until melted and lightly golden. Check that the center reads 165°F (74°C).
- Top with the crispy fried onions and chopped fresh parsley, then serve straight from the dish.
Notes
This casserole is forgiving if your mashed potatoes are homemade and still warm when you layer them in. If you are working with cold leftovers straight from the fridge, add 5 minutes to the first bake. The crispy onion topping is best added right before serving, even at the table, so it stays crunchy through the meal.
