KFC Chicken Sandwich Recipe

Ingredients
  

  • 2 large boneless, skinless chicken breasts, halved horizontally to make 4 cutlets
  • 1 cup buttermilk
  • 1 large egg, beaten
  • 1 ½ cups all-purpose flour
  • 2 tbsp cornstarch
  • 1 ½ tsp salt, divided
  • 1 tsp black pepper, divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • ½ tsp dried oregano
  • 3 cups neutral oil, for frying
  • 4 brioche burger buns
  • 4 tbsp mayonnaise
  • 8 dill pickle slices
  • 2 cups shredded iceberg lettuce

Method
 

  1. Whisk together the buttermilk, beaten egg, ½ tsp salt, and ¼ tsp black pepper in a large bowl. Add the 4 chicken cutlets, submerge, cover, and refrigerate for at least 30 minutes.
  2. Combine the flour, cornstarch, 1 tsp salt, ¾ tsp black pepper, garlic powder, onion powder, smoked paprika, cayenne, and oregano in a shallow dish and stir to combine.
  3. Lift each cutlet from the buttermilk, let the excess drip off, press into the seasoned flour, dip back into the remaining buttermilk, and press into the flour again. Rest on a wire rack for 5 minutes.
  4. Heat the oil in a heavy-bottomed pot to 350°F (175°C) and fry the cutlets 2 at a time for 5 to 6 minutes, flipping once, until deep golden and the internal temperature reads 165°F (74°C). Return oil to 350°F between batches.
  5. Spread 1 tbsp mayonnaise on each top bun, layer ½ cup lettuce and 2 pickle slices on each bottom bun, top with a fried cutlet, and close the sandwich. Serve immediately.

Notes

The double-dredge is the step most people skip when they are in a hurry, and it is the one that matters most for a thick crust. If your buttermilk runs low by the third cutlet, a splash of plain milk in the bowl works fine. These are best eaten right away; even 20 minutes on the counter softens the crust noticeably.
